Sandra and I do all the cooking at 302 on the Square. Our recipes have been developed through many generations and combinations of recipes. We use the absolutely best ingredients available. Our chickens come from Little Portions Hermitage here in Carroll County and are free-range all natural chickens. All our eggs, including the eggs that go into Sandra's home made quiche, come from a local farmer and they are free-range natural eggs and Fred even plays the violin for them while his wife pets them. They are pampered eggs and delicious. Our dedication continues through every aspect of our food, including grading our own cheese from whole blocks, so we know what our cheese is and because of the additives in pre-shredded cheese.

Our dishes are made in small batches, so we can be out of menu items from time to time, but this is how we maintain food quality and taste. If everyone decides to get chicken and gravy, on a given day we can get cleaned out and these are slow cooked, labor intensive, dishes that take about a day to create. If there is a specific dish you would like on a certain date, please call us and let us know and we'll make sure to have it for you.

I worked off shore in Louisiana for years and our, made from scratch, Authentic Cajun Red Beans and Rice with Andouille Sausage is a combination of recipes that I have used to form my own secret blend. They are saucy, spicy and will leave you full and satisfied. Louisiana Chicken and Gravy is an original recipe that is styled after an old time recipe that is a flavor that will take you back to your grandmother's or great-grandmother's kitchen. We start with the free-range chickens baked tender and pulled into a butter cream sauce, with a traditional Cajun pepper roux (pronounced rue, Cajun sauce or gravy) and served over extra long grain rice. 

Sandra's Home Made Chili is made from scratch, with ground chuck, from a recipe she has been working on for years and when you have it you will taste the love. Have one of our Knife and Folk Chili Dogs, with our all beef 1/4 pound Big Daddy Dog and you will have the ultimate chili dog experience. Her Quiche of the Day is made with farm fresh eggs, real heavy cream, and all natural ingredients. If you've been looking for the best, it's right here at 302 on the Square.
